Turkey Gumbo



     based on what my aunt Jayne made in New Orleans

     boil leftover turkey bones after big dinner  
     in about 4qts of water

     remove bones, return meat to broth

     add several chicken bullion cubes if needed
        about 1 cube per 1 or 2 cups water, or some miso 

     add to broth
      1/2 lb smoked, pork, or Italian sausage, fried

     saute 
      2 onions, chopped
      2 stalks celery, chopped
      1 green pepper, chopped
      1 bunch scallions, chopped

     mix 4-5 tbsp flour into sauted vegetables

     add vegetables to soup, along with 
      1 -2 lb cubed ham
      1 stick pepperoni, sliced

     simmer about 1 hr

     add several cups cleaned shrimp

     boil a few minutes to heat shrimp

     stir in
     chopped parsley
     2 tbsp gumbo file

     serve over cooked rice in soup bowls

     sprinkle extra fresh parsley and 
              chopped green pepper on top

     (freeze some for later; this recipe makes a lot)
