sugar cookies and buttercream frosting

sugar cookies

3/4 cup shortening (at least part butter... the more butter, the better flavor)
1 cup sugar
2 eggs
1/2 teaspoon vanilla
2 1/2 cups flour
1 teaspoon baking powder
1 teaspoon salt

combine shortening, sugar, eggs, vanilla and mix well.

blend flour, baking powder, salt and mix into shortening mixture.

roll dough on floured board to about 1/4 to 1/8 inch thick and cut out with cookie cutters or knife or floured drinking glass. (if dough is sticky, try chilling it for an hour or so first. you can also try making drop cookies: drop teaspoon-sized lumps of dough on baking pan and flatten to about 1/4 inck thick.)

bake on ungreased cookie sheets
for 6 to 8 minutes
at 400 degrees F
until lightly browned on bottom
makes about 4 dozen 3" cookies

buttercream frosting:

1/3 cup melted butter
3 cups sifted confectioner's (powdered) sugar
1 teaspoon vanilla
about 3 tablespoons water, milk or cream

mix butter and sugar together, add liquids, beat til smooth.

you might need to add more (or less) sugar or liquids, depending on the humidity of the day and how thick you want the icing.
