lentil patties

- all measurements approximate -
these are very free form; just toss together what's on hand

cook about 1 cup dry lentils,
      or start with about 2 c cooked lentils

while still hot (or cold is ok, if using leftovers)
mix in:
about 1 tbsp flour
1 egg (optional)
1 onion, chopped
other chopped vegetables if desired: celery, bell pepper,
      bok choy, spinach, fresh parsley or basil,
      grated carrot or parsnip
seasonings to taste: salt, pepper, oregano, thyme,
      garlic, cumin, rosemary. (try seasoning as if making
      fried chicken; or spaghetti; or refried beans)
about 1/4 to 1/2 c wheat germ or uncooked oatmeal (optional)

method 1) mix in enough flour and other things so it is thick enough
      to form into patties, or to spoon into pan and flatten
      into patties.
      or,
method 2) add enough water to the mixture so
      it is like very thick pancake batter, and pour
      into pan.

fry in hot oil until browned on both sides.

serve with hot tomato sauce poured over patties and grated
      cheese on top, or top with yogurt or sour cream or salsa;
      garnish with fresh parsley or basil;
      or put in bun like a hamburger.

      cold lentil patties make a good sandwich, very
      similar to a meatloaf sandwich.

serves 2 - 3 people
