lemon bars

crust

2 c flour
1/2 c powdered sugar
1 c soft butter or margarine

filling

4 eggs, slightly beaten
2 c sugar
1/4 c flour
1 tsp baking powder
1/4 c lemon juice

- - -

mix crust ingredients until crumbly
press into bottom of 13x9 inch pan
bake at 350 degrees F for 20 -30 minutes, until golden brown

meanwhile, combine filling ingredients except lemon juice
mix well
stir in lemon juice
pour filling over warm crust

return to oven
bake at 350 degrees F for an additional 25 - 30 minutes
until top is light golden brown

cool
cut into bars (makes about 36 bars)

optional glaze topping:
1 c powdered sugar
2 -3 tbsp lemon juice
mix well
if needed, add water or more lemon juice to consistency desired
spread or drizzle (depending on how runny you make it) on cooling bars before cutting
