sift together and set aside:
2 cups flour
2 teaspoon baking powder
1 teaspoon salt
cream together:
1 cup shortening, part butter
2 cups sugar
beat in:
2 eggs
4 ounces melted chocolate, or
cocoa and oil equivalent to 4 oz. chocolate
3 tbsp cocoa + 1 tbsp salad oil = 1 oz baking chocolate.
(I think the cocoa makes them taste fudgier.)
2 teaspoons vanilla
stir the flour mixture into the shortening mixture,
add 2 cups oatmeal
mix well,
drop on greased baking sheets,
flatten with a fork or fingers,
bake at 350 degrees F
for about 8 to 10 minutes.
NOTE: the baked cookies taste almost the same as the dough,
but you shouldn't be eating raw eggs these days anyway.
