chicken in coconut sauce

- all measurements are approximate -
like having chicken in whipped cream, only better

my adaptadion of an Indonesian recipe

saute in oil in a wok or large frying pan:

approx. 1 tsp shrimp paste
1 or 2 cloves garlic, chopped
1 onion chopped
approx. 2 inch chunk of fresh ginger, grated or sliced

cut up chicken
1 tsp coriander
1 tsp cumin
juice of 1 lemon
pepper or hot sauce or red peppers

when chicken is almost completely cooked
1 or 2 stalks rhubarb or 1/2 c cranberries
or 1 or 2 cut up apples, or all three
and green vegetables: bok choy, napa, spinach,
celery, peppers, what have you
cook vegetables until hot but still crisp

add coconut milk (santen)

heat a few minutes until coconut milk is warmed

serve over cooked rice
