Apple Cake

1 1/4 cups brown sugar
2 eggs
1/2 cup oil
1 teaspoon vanilla
3 cups peeled diced apples
        (about 5 medium)
1 3/4 cups whole wheat flour
        (or buckwheat)
1/2 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg

Oven: 350 degrees F

Beat together sugar and eggs until thick and light.
Beat in oil and vanilla. Stir in apples.
Sift flour with salt, baking soda, cinnamon, nutmeg.
Fold into apple mixture. Pour into greased nine-inch
square pan. Bake 45 minutes or until done.
Serve warm.
